Baby and a pancake

Soooooooo Timmy ate a pancake today! I cut it up, and piece by piece he ate it! Granted they are my special pancakes and are crazy healthy, these aren’t Aunt Jemima lol. But they taste fantastic and we all love them! so I am sharing enjoy!

Brain Food Pancakes
1 cup Silk soy milk DHA Omega 3
1 cup Oat Flour
1 cup Mashed Pumpkin
1/2 tsp baking powder
2 Tbsp ground flax
1/2 tsp cinnamon
1/4 tsp nutmeg
1 Tbsp molasses
Dash of salt
Dash of baking soda

Mix all ingredients well. May need to add a little more or less soy milk
depending on the wetness of your pumpkin.
Heat up a skillet on medium. Add a Tbsp of coconut oil, coat skillet. Ladle
pancake batter according to the size you prefer cook till golden on one side,
flip and repeat. Once golden on both sides top with vegan butter and maple syrup
and enjoy!
